Why would you want to go to a Chain Restaurant in Las Vegas? You can have the same food from a chain restaurant anywhere.. you are in Vegas.. try something new. Every casino/resorts have numerous restaurants from delis to casual dining to top notch expensive restaurants to meet every taste buds.
For example. MGM Grand has the the Deli next to the sports bar, Nob Hill, Grand Wok.. but they added a HUGE section of restaurants.. Craftsteak, Shibuya, Pearl, Seablue, Emeril's Wolfgang Puck's, Fiamma... they are all distinctive and I personally love Crafsteak but they are quite pricy. And I've had quick bites from 'wichcraft.. Oh yeah.. if you want chain restaurant.. they do have Rainforest Cafe.. but I wouldn't recommend it.. Try something new!

Skip the chains. They're generic.
For Mexican - I like the Pink Taco in the Hard Rock. AJs Steakhouse is good there too. (But it's HUGE food. Bring an appetite!!)
For breakfast - I love America cafe in NYNY. My best friend and I had a tradition of that being the first and last breakfast of the trip.
Ni9e steakhouse in the Palms is good. My boss swears by the one in the Bellagio though.

Little gambler being consumed by big casino.
Forget the chains, do something better. And forget that Italian place. It is not worth the money. Off the strip is usually the best bet.

We always go to Applebee's for Happy Hour and dinner. The bartenders are always thinking up wonderful cocktails.
